We have a very hot summer here in Transylvania this year, hot and humid... the best way to loose a bit of weight, I recon, for no other reason than losing the slightest little appetite. I practically live on fruits and water.

And in times like this I cannot help but dream of the sea, her colors, my bare feet sinking into the warm sand... oh the lovely blues...

Summer fun

I gave it all a lot of thought, before I finally decided to leave my work, orders and everything business related and spend two weeks managing a children's camp along with 3 amazing individuals (one of whom is my caring and very talented husband to be). It was not an easy decision to make, as such an absence sets any small business owner very much behind, but it definitely was the right one to make at this very point in my life. Physically it was tiring, sure, but emotionally it was incredibly fulfilling...honestly it all seemed just like a fairy tale... I felt like I was surrounded by angels for two entire weeks and I am ever so grateful for not passing up this opportunity...

I've learned and experienced so much, and it has opened up my heart in ways I could not imagine to be possible. Life took wonderful turns both for me and for Gaspar these past couple of months and we are incredibly blessed to meet helping souls along our journey...

Sour cherry treats

Probably one of the easiest desserts out there, light yumminess that can also be served for breakfast with a glass of milk (or in my case, an ice latte!).

Sour Cherry Treats


4 cups of sour cherry
18 dkg butter 
18 dkg flour
3 eggs
10 dkg powdered sugar

1. Remove seeds from the sour cherries.

2. Beat egg yolks with the butter until nice and smooth, slowly add the sugar too (I used an electric mixer, but you can also use a food processor). Beat the egg whites until stiff (this one I do by hand to get the best result).

2. Slowly whisk the flour and the beaten egg whites into the egg yolk-butter- sugar mix, alternating them and adding one spoon of each at a time. Adding all ingredients and mixing them together too fast will result in a gluey cake, once it's baked, so be careful.

3. Line pan with baking paper, pour in the cake mixture, spread. Then place the cherries carefully on top, gently pushing them into the cake.

4. Put the pan into a preheated oven, bake at about 180 C degrees for about 30 minutes. Check with a fork before removing pan from the oven to see if the cake is ready. If you still have uncooked mix stuck to the fork, leave the cake in the oven for another 5-7 minutes.

I did this cake in about 40 minutes, together with baking and all. Super easy!
Oh and by the way, the sour cherries were picked from a friend's garden, and they are as organic as it gets. Absolutely delicious!

sweet detail {RASPBERRY}

I love smoothies for breakfast, but today's was the best I had in my entire life. I rarely follow any recipes for these types of simple foods, so I hardly ever experience the same taste twice, but boy I'd wish to...

Anyway, I'm left with some beautiful raspberries and decided to find them a good use. Not a rich taste, just something light and summery...

Do you know of any great raspberry recipes? I'd love it if you shared...

Here are my picks so far:
-I can almost imagine the softness and sweetness of this cheese mousse. I couldn't find the recipe for it though, but I guess it could easily be done with any cream cheese mousse recipe.
-This almond-raspberry cake sounds like a plan
-I've never tried any fruit pizza before, have you?
-No recipe for this berry cake, but it sure looks yummy
